She dumpstered a chef who was considered one of the top 5 contestants at BLUE, but the buildup was so lazy that it wasn't even satisfying.
She was also the first one to stand up to Asahi on Erina's behalf. Of course she lost to cross knives transmutation magic, but it was refreshing to finally see someone tell him off after weeks of watching Erina meekly put up with his bullshit.

After Souma beats Asahi, I can see the author going to ways with the mom. Either he'll serve her the peanut butter squid shit dish, making her go "oh my, what is this? I never had deliberate shit taste stimulate my taste buds!" or he'll cook together with Erina to create some ultimate dish together. Unless the editor wants to be done with this, then the 5 cuisine dish will be the new thing and they'll call it a day.

The next arc will be about Souma's mum and her family. It'll turn out his mum was part of an ultra-wealthy family with global reach, that easily makes the Nakiris look poor. They had no idea about Souma's existence, but after he wins BLUE, they'll know he's related to them and attempt to have him taken to the family's main house.
Souma longs for his mum (to be fair, he's always seem touchy feely about his parents), so after a short struggle, he'll agree to go with them.
Now it'll be Erina who has to deal with Souma family's problems.

BnHA hasn't tanked anywhere near as badly as this has.
Honestly, I prefer this series now because it's so bad its funny territory, and the threads are often fun because everyone's united in their hate/disappointment whereas BnHA is just dull with shit threads.
