Because there is not a sustainable energy to keep them functioning, the technology to do that is not a reality in our world so the approach of a giant energy cable keeping it moving this "armor"(because is not even a mecha in this case) makes total sense, this is the most realistic approach to a giant mecha we have gotten, simple as that, and the best part is that it not only makes sense but is also perfect for the entire setting and development of the story.

False, forstarters one of the reasons it worked with Ramiel was because Ramiel NEVER MOVED from his place, without to mention that sending the entire city to the shit everytime you wanted to beat an angel wasn't a realistic solution, they did against Ramiel becaise it was their last option, and if another angel attacked after that they would had been fucked.

Energy isn't the problem, the issue with giant mechs in the real world is that they'd simply collapse under their own weight, and there is basically no material strong and light enough to support working limbs and joints at that size.

Cables are great from a writing perspective. They add limitations and intricacies. Every battle is more suspenseful because it can turn into a race against time at any moment and they are used as a part of battle tactics a few times to add variety. The loss of symbolic and lore elements that would occur if Evas didn't need cables would be negligible to the overall quality of the show compared to the impact the lessened tension, variety and groundedness, that would come with less restricted Evas, would have.

Seele were literally trying to handicap Nerv in any way possible. From cutting their defense budget every year, to giving their best weapons a power cord and a timer (that's why they lost their shit when Unit 01 got an unlimited power source). They knew that the second the last angel falls, they will have to storm the place, and that Gendo won't go down without a fight. Eva unit 02 fell victim to the time limit (and the lance). If there was no time limit, Unit 02 may have lasted longer, since Asuka could have planed out her moves better without rushing against time.

Kinda ironic that this only ended up benefiting SEELE's instrumentality plan in the end, since Gendo also goes the step of disrupting their plan by having the real Lance of Longinus chucked to the moon. SEELE is able to take advantage of Unit-01's power by having it awaken to summon the lance back down, and just use Unit-01 in place of Lilith.

I've never quite bought that theory, since it's made very clear that SEELE needs all the Angels defeated. It's not like secret alien defence organisations struggling to obtain funding is a concept Eva introducedd...

SEELE had these 9 super hax lances made for the MP EVAs, and they couldn't spare any of them for NERV any sooner?

Fuyutsuki was surprised the MP-Evas were even ready, so SEELE had been keeping NERV in the dark on the exact details of their progress.

But why would they try to hinder NERV when they know full well that if it fucks up they're dead? Besides, we even know that they couldn't finish all the MPEvas in time, so it's not that much of a stretch to say that they would have been used against the Angels if they were finished in time. And circling around to the power point, it's fairly strongly hinted that Evas don't have S2 engines naturally, so they couldn't have had an Eva that didn't need power cords until after Shamshel at the earliest.
