Togashi already explained this plothole in HxH's current arc. The Stand rebuilds the body of the user after it consumes another person.
Carne had probably already been killed in the past and his Stand had already eaten somebody and revived him. That is how he knew.

I dont think he knew how it worked to its fullest though. he probably thought it was a stand that powers up based on your feelings (hatred), but not that it activates after death.
