Some side notes and general rambling thoughts.
There was times were the OST was too loud that characters speaking were muffled out.
There was some use of cgi, but never for more than a second a time.
The OST was filled with prayer-like singing throughout a lot of tracks.
Sabito has a theme and it really stood out to me.
Arm demon looked way more imposing in the anime.
I liked the attention to detail that the Nichirin blade that Tanjirou took to the selection was blue in color, since he was borrowing Urokodaki's.
There was a few scenes that made me laugh out loud. A lot of them having to do with Nezuko.
There was a shift into sort of a gag/cartoony art style but not full blown potato.

Overall animation was pretty spot-on. I didn't notice too many quality moments, and when I did, it was because the scene itself was comedic in tone. The fights were all pretty great and the water effects we've all scene in the pv were integrated really well. This is a really great adaptation and my only worry is that the studio burns out and can't keep up this consistency of quality of animation.
There was a lot of blood, particularly when a demon had already killed a family like in the case of the Kamado's or at the shrine with Tanjirou's first demon encounter. It's not as gory as say, Hellsing Ultimate, but it doesn't shy away from blood either.
There wasn't a focus on other hunters during the Final Selection besides the one Tanjirou saves from the Arm Demon.
Tanjirou at the end notes that only 4 people survived out of the 20 that entered, and then it cuts to Ubuyashiki saying that he's glad he's got 5 more cute swordsmen now. Pretty much exactly how the manga went after the Final Selection was over.
Oh which reminds me, there was a scene at the end of the Final Selection as though it implies that Tanjirou had to get to a location rather than survive 7 days. It was just weird, but it looked pretty.

There's a subtle changed after the 6 months when training under Sabito. It's a little hard to hear but definitely there.

When Urokodaki is explaining what the demon corps are, they show a giant cliff. At the bottom of the cliff are demon hunter corps and on top of the cliff are the silhouette of the pillars with the exception of Giyuu who's in full color.

Not to my recollection.
He appears again when Urokodaki is reading his letter that let's him know he sent the Kamado twins his way the letter is voiced by Giyuu, and then appears briefly in the scene mentioned above.
So going chapter by chapter, I can already tell you that they extended the departure scene when Tanjirou goes to sell charcoal. There's a lot more playfulness with his siblings. When he talks about his grandma, there's a scene where he's actually sitting in her lap.
Before he even gets home, he smells the blood and rushes home instead of just seeing the carnage.
The tussle with Nezuko also seemed longer in the anime.
Tanjirou against Giyuu might've also been more drawn out.
Tanjirou narrates it because his thoughts are the dairy he's been writing to Nezuko.

Chapter 2
Everything seems to be pretty much exactly the same.
They put more emphasis on Nezuko's internal struggle of whether to eat the humans or not.
There's just a tiny bit more to the fight scene, like the human head leg thing actually running at Tanjirou for a bit.
Instead of slamming the axe down on a tree, the head demon wraps it's hair around the handle of the axe to try wrestle it from Tanjirou and then Tanjirou throws the axe at the tree, pinning the demon. They also put more emphasis on Tanjirou's hesitation with the knife.
I forgot. Biut what I did notice that there was few scene that stopped and started abruptly, probably due to the fact that it's 5 episodes instead of a movie.
It never felt like the plot was slow. The pacing was pretty good, and they filled out time by adding scenes that never felt forced unnecessary.
It had some pretty sad moments, but I saw everything coming so it didn't feel as impactful.

Chapter 3.
They translated the end of Giyuu's to imply that Tanjirou is worthy of being his true successor. Maybe foreshadow to the fact he doesn't think of himself as the Water Pillar?
The journey to the bottom of the mountain is a lot more brutal. They added a few more traps and Tanjirou getting bodied by them.
Other than that, everything else was adapted with scenes getting more details, like Nezuko actually sewing up her Kimono in the household and the the jog to Urokodaki's house not just being a bunch of speedlines.

Got cancelled really fast, it was fairly mediocre, one of those exorcist series that are a dime a dozen these days. It didn't do a lot to stand out, the first chapter kind of reaches for the same emotional weight as Kimetsu but doesn't really achieve it. No, it was a lot more imposing than that. Like it was a rocky cliff with all the pillars standing in a line looking over all the other scrub hunters. It was pretty great.
Chapter 4
The scene describing the demons and hunters shows an actual fight scene between the demons and hunters. The Nichirin blades are also colored for every hunter, and this is before they introduce the concept of colored blades.
Other than that, also pretty much exactly the same. The training with Urokodaki is also a bit expanded upon. With a few more comedic scenes of Urokodaki telling Tanjirou he's doing something wrong and then beating him up for it.

Chapter 5
Seemed pretty straightforward. The initial fight scene with Sabito was expanded upon. Makomo is also really cute.
Chapter 6
There's a celebratory dinner before Tanjirou sets off to the Final Selection. A scene was added where Urokodaki actually hands the mask to Tanjirou.
Tanjirou mentions them by name in this scene rather than just mentioning their masks.
When they pan to show all the entrants to the Final Selection, a certain boy with no shirt, black pants, and a fur coat at his waist is seen, but his upper body, mostly his face is obscured.
There's a bit more to fight with the two demons fighting over Tanjirou.
Like I said before Arms Demon is a lot more imposing in the anime, a lot of little details are added like Tanjirou's nervousness before becoming resolved in saving that boy.
Also, a small tidbit, the Aniplex staff asked the audience to yell if you had already read the manga or were coming into the series blind. The audience seemed to be 50/50.

Chapter 7
Not much to mention. Fight scene is expanded, and there's an added scene to show how angry Arms Demon actually got when the era name changed. Arms Demon also goes over how exactly he killed Sabito.
Chapter 8
A few scenes where Urokodaki is actually hunting down and defeating the Arms Demon are added.
Arms Demon walking alongside his brother holding hands is given more detail.
All 13 students of Urokodaki are shown in this scene.
There's an added scene after Tanjirou kills the Arms Demon, where he asks a demon how to turn back into human, but has to kill it because the demon won't answer.
There's also that really weird scene where Tanjirou runs into a bunch of Wisteria flowers and then sighs in relief that the exam is over. I still don't get why this was added. It made it seem like this Wisteria Flower Garden thing he finds was like a goalpost or something.
Ubuyashiki's kid's creepiness gets dialed to like fucking 11.
There's an added scene where Tanjirou doesn't know how to pick an ore because who the fuck does? Genya voices those thoughts aloud, and Tanjirou gains the confidence to pick one, being the first of the four.

The journey back home is actually a bit more painful for Tanjirou. It really shows how worn out and exhausted he was from the Final Selection.
I actually lied, the first panel of this page isn't in the anime. I don't recall a close-up of Urokodaki's face with tears coming down.

The hug is there, there's just not a close-up of it. It's distanced out to show the forest and the house as well. That's what I meant by a different angle. Some scenes had a 1:1 with the manga panels and some didn't. This was one of the scenes that didn't get the close-up.
Nezuko's kick is also more distanced out to see the whole house instead of being focused on the door and her foot.
