Isekai is usually the same general fomula with its own individual spin per series. It is a robust enough fomula that whatever other themes the author wants to use can be crammed in there.

It is popular because it is a sandbox for fantasy ideas and has a huge list of tropes to use as material. People know what to expect from it but also get that series individual flavor. They are like simple daydreams you can read or watch happily without thinking to hard or adjusting to an unfamiliar setting. They make it easy for the writer and consumer.

There are two main expectations for isekai, the first being that you should have a basic knowledge of Japanese vidya/RPG tropes, and the second that you should be able and willing to self-insert as "just your average but slightly nerdy Asian high schooler/college student/businessman". I realized that I didn't fit either of these categories after trying to get into isekai and dropped it completely save for one or two nonstandard series I still follow. If you can't fulfill either of these expectations, you won't like it either.

Is it really Isekai if the "other world" is heaven? If so, then where do we draw the line? Goku is a Saiyan who landed on earth, does that technically make Dragonball a reverse isekai? Technically speaking planet Vegeta is "another world" and we constantly see the interactions between Earth (or Earthlings) and "other worlds" throughout the series.

What? It's relatively common. Usually they get reincarnated as either the son or daughter of some lesser royalty like a Duke or Earls son or daughter. It's slightly more common for the memories to come back when they're like 3 years old or so to skip over stuff like breast feeding and learning to speak but there are plenty of stories where the MC starts out as a literal babby. Death Mage and Power in the Shadows are two examples.

There are really bad cases where the whole monster reincarnation is just constant human form where the monster form is just a bad excuse for OPness with nothing more to it, like Jaryuu Tensei, however other monster reincarnations into monster form like Slime balance both forms, while in Kumo the human form only appears very late into the main story.

All of the characters are inverse of normal isekai
In a normal isekai kazuma would be a bland, vaguely normal guy with a sense of justice and wanting to protect his friends. Instead his is an extremely petty asshole who will do anything that personally benefits him, including fucking over his party, and defecting to the bad guys team.
Aqua would be a pious, pure maiden, who loves MC-kun and guides him on his journey. Instead she is an incredibly stupid, narcissistic, alcoholic that gets run out of her own scam church for pretending to be a godess.

Megumin would be the wise, reserved, and shy wizard who is always thinking up plans and using textbook knowledge. Instead she is a hyper agro baka that will blow her entire load immediately at nothing and then be useless because learning other spells is for pussies.

Darkness would be the brave self sacrificing knight who puts herself in harms way for her comrades. Instead she constantly bring danger to them by being a huge whore who just wants to get raped to death by animals.

Kazuma isn't so much an inversion as an exaggeration. It's not parody, it's satire. All of what you've said, save maybe Aqua, is basically 'yeah but what if the archetypes were on steroids', and even the setting itself really works that way
I mean just look at it, really. Most D&D (and by extension JRPG) worlds are unrealistically dangerous with Adventure! and Monsters! and Dungeons! around every corner. In Konosuba they're around so many corners that even the corners themselves are fucking monsters and cabbages fly at speeds rivalling racecars to try and escape from your maw. It's not really an inversion at all.

I like Konosuba a LOT, I love the lighthearted fantasy setting and every member of the party. I love Kazuma a lot as well because he is his own character and not just a self insert. He has likes and dislikes and dislikes and independently acts on them. He can be an asshole but deep down is good.

Every other member of the party are also flawed in their own way. Aqua is stuck up and full off herself because her godhood title, Megumin is stubborn as all hell, and darkness sometimes puts her personal sexual desires over the safety of the party.

Despite all this, they are good people and work off each other well. It makes them feel like friends when we see them beyond the social mask they put of that is only nice, we see the real them and that is refreshing.

At least KonoSuba and Re Zero have somewhat unique takes on the genre. Re Zero is all about suffering and I would say that MC isn't really a huge badass. He struggles and suffers greatly in the story. Meanwhile KonoSuba is the opposite where everything, especially the suffering, is played off as comedy. All the others we've been getting lately really do fall under that tree though of MC uses his superior knowledge to streamroll through the new world he's thrust in. It's a shame that people care more about the genre than how well that genre is executed. I think that's why Shield Hero is so popular around these parts. It pretends to not follow the cliche of MC being so much better than everyone else with his trust issues but in reality he's way smarter than everyone else and thus is the only competent hero.

I want to write an isekai story about a ghost, but I'm not sure what direction to take it in. I want something like the MCs spirit being send to another world and a goddess promising him a new body if he can fulfill some girls wish, but from there on I'm not sure how to do it. Should the MC fall in love with the girl and get a magic body when he meets the condition so they can live happily together, or should he be reborn as the child of the girl when she finally achieves her dream and marries some other dude?

His power would obviously be something like being able to possess people for a short amount of time and he has to work something out with that.

A boy falls in love with a girl.

But, the next day, when he recounts the previous day's confessions to the girl, she only looks at him with a perplexed expression. After some investigation, he finds out that the girl he called is not the same girl he fell in love with. In fact, she doesn't exist in this universe at all. She is the girl's alternate universe counterpart, who has fallen in love with the MC's own AU self, who too is blissfully unaware of her crush.
