The reason Epitaph works like it does it because it doesn't see into the future, it sees a person's Fate. Diavolo saw himself killing Bucciarati, so it definitely happened, Giorno just distorted the result.
Rolling Stone also plays very heavily into the idea of hard determinism and Fate being predestined but I won't spoil that for my AnimeOnlys. Mista's character is laid out along the same lines as well, but again, spoilers.
GER can change the qualia of any phenomen to whatever it pleases, which is a long way around of saying that it can alter Fate, or the outcomes of any actions.

Fate is deterministic in Part 5, and arguably all of JoJo's, although Araki's bizzarre understanding of time travel makes it seem like Fate can be altered.
But it can't, and Part 5 develops this theme the most, with DIO as God setting the events that determines the Fate of the various Stand users in motion and Giorno as the Christ parallel, guiding the faithful.
King Crimson/Epitaph allows Diavolo/Doppio to see the outcome of events, or Fate, but not to alter it. Using King Crimson to "erase time" just locks in actions that lead to a character's fate - even if Diavolo/Doppio doesn't understand what they're seeing. Or, in Diavolo's turn of phrase, "only the Results matter".
Giorno's Gold Experience, with its life-giving ability, can seemingly alter the Fate of a human, which is Death, but really it only superficially staves off the effect of Death and even then only to further the other characters along their paths through the betrayal of Passione. Mista best understands this, since he believes in hard determinism and is the most faithful of Giorno's " disciples", which is why he serves as Giorno's right-hand man at the end of the story and is the only member of Team Bucciarati who survived with his connection to Gio/Jesus intact. The parallel becomes even stronger when you account for the fact that Fugo was originally going to be the Judas that betrays Gio, although in the final story he's more of a Doubting Thomas
Rolling Stones plays on this theme even more directly because it, too, demonstrates that the members of Team Buciaratti are predestined to die, and torments them with this knowledge
When Giorno, like Jesus, willingly sacrifices himself to overcome Diavolo through the use of the Requiem Arrow, he gains the ability to overcome Fate, just as Jesus overcame Original Sin through his sacrifice. Narancia dying in Giorno's body is the parallel to Jesus dying but rising from the grave.

Star Platinum can steal bikes and shit at the beginning of Part 3 because Jotaro's a shitty selfish punk, not because of elaborate theories about time manipulation keikaku. People with naturally inventive mentalities also have the most growth with their Stand abilities fairly consistently across all Parts - Jotaro and Giorno and even Kakyoin spirit up new ways to make their Stands work because they're clever fighters, while characters like Josuke or Polnareff are more straightforward thinkers.

In the case of Notorious BIG, the mentality of having your life exist entirely to be a weapon that can absolutely never be traced back to the Boss lines up perfectly with the manifestation of an unkillable Stand that activates on user death.
I think it was always on Giorno. It attached itself to Giorno when he touched Carne and brought the fingers along. It put the fingers in the freezer when Giorno opened it. Neither Giorno nor Mista saw it happen but this isn't the first time a stand has acted in plain sight without being seen.

The stand is bound to the area in the prison it's in. Maybe that has something to do with it. Just like Superfly except it doesn't have a requirement that someone be in it at all times. So while it's still Emporio's stand it's somewhat separate from him. Or maybe Whitesnake's disc ability can force two stands into someone at a time. I don't know if this was ever mentioned in part 6. Emporio said Weather Report was kind of acting on its own will too so maybe that skirted the limit somehow.

Survivor had my favorite fight introduction in all of fiction. When the guards start hitting each other and you realize something is going on and then Viviano opens every single fucking cell and challenges everyone to just fucking go at it.
Survivor is the hypest stand.
The fight in itself its also excellent in how simple it is, just Jolyne and him beating each other, no classical Jojo keikakus within keikakus, threads and meteors and nails and chunks of flesh getting ripped off. Jolyne screaming at the end with the star pose was amazing too. Overall one of the most hype moments in manga imo, and just in one arc.
