OP here, i am both thankful for my guides, yet i am both more confused as to where to go now, and similarly amazed this can be such a daunting question.
I'm between fate stay night and carnival phantasm, anyone care to help me choose between whats the better pick? Also whats the difference between FSN and FSN unlimited blade works?

Sooo did any one actually watch last encore or was it so trashy everyone just ignored it?
Fate stay night is a visual novel, divided in three routes.
First route is saber's route, fate stay night
After you finish the first route, you unlock unlimited blade works, rin route
Finally after that you unlock the final route, heaven's feel, which is sakura's route.
Every route complements each other and they are meant to be played in that order. (Fate introduces you to the world and the character's, unlimited blade works is more action focused and also explores emiya more, and heaven's feel acts as the finale of the game.
Now there is a problem.
The saber route was adapted in 2006/2007 I think and it was a mess that at the begining tried to mix the three routes somehow and finally focused in the saber route. You can watch it and learn saber and shirou's story more, but you can just skip that and jump straight into unlimited blade works for how shitty the adaptation was. It has a god tier ost though.
So either watch fate(deen, 2006 or so) then ubw (ufotable 2014) and finally the heaven's feel movie trilogy (presage flower, lost butterfly and spring song which will air the next year and will be the end of heaven's feel) or do the same but skipping the fate adaptation from deen and wait for a remake.
Oh, if you don't stand emiya or think unlimited blade works is too "inmature" compared to zero (I don't agree with that as a VN reader but the lack of emiya's monologue in the adaptation can make it feel like he is retarded to animeonlies) don't think in any way to drop fate. Heaven's feel has the same tone or even a bit darker than zero and is considered its spiritual prequel (urobutcher basically took the most inspiration from that route while writing zero, but it requires you to watch unlimited blade works to understand it so no skipping unlimited blade works).
The other option and honestly the best option would be to just play the visual novel, it is twice as long as TLOTR though, so better get ready for some reading.

Carnival Phantasm is a parody and you will only understand it after you watched fate stay night.
Fate is the first route(timeline) of Fate/stay night, Unlimited Blade Works is the second one, Heaven's Feel the third one.
Sadly there is no good adaptation of Fate(the first timeline), so just skip right into Unlimited Blade Works.
Fate/stay night first. There are three different routes with different main heroines:
>Fate: Saber is the main heroine, it has an anime adaption by DEEN but to be honest it is really really bad (the music was great btw)
>UBW: Rin is the main heroine, has an TV series anime adaption by ufotable. If you choose to skip DEEN anime then watch UBW first
>HF: main heroine is Sakura (+ Illya too). It has an anime movies trilogy by ufotable. HF I (presage flower) and HF II (lost butterfly) have been released. HF III (spring song) will be on 2020
Carnival Phantasm is an spin-off FSN x Tsukihime (+ Melty Blood) crossover anime so you have to know FSN and Tsuki before watching this or you will not understand anything lol. So yeah go for Fate/stay night first
I watched it, just 6-7/10 for me. Alice's floor and Rani's death were the best part of Last Encore desu and i enjoyed it a lot. The ED was nice, especially those illustrations & i like that song. Last Encore is not an anime adaption of the original Fate/Extra game btw, if you don't know

Read the visual novel. If you can't finish the whole thing, at least the Fate route in the VN and then watch the Unlimited Blade Works anime and the Heaven's Feel movies.

I still recommend you to give it a try to the visual novel when you can, even if its long as fuck, its amazing and full of great moments. I still get shivers watching the final fight of heaven's feel there.
There is a spin off you might want to check out after you finish all fate stay night, emiya's cooking show, which is comfy as fuck (its literally everyone cooking and chilling). Apocrypha and last encore are pretty shit. There is a babylonia adaptation coming. The source material is good. But there is still potential for the adaptation to be shit. Just don't worry, after finishing the main series (zero-fate-unlimited blade works-heaven's feel) the rest of the series are just alternative universes and spin offs that are not tied to other fate series and can be watched in any order and don't affect the stay night verse.

actually, the first two responses were fate zero or fate stay night, they said fate zero was a prequel and was better than fate stay so i went there. mostly they reccommended the anime, then later some sperg (probably you) said "jUst reAD THe ViSuAL NoVEl :^)" instead of just letting someone enjoy something as they want. Also "spoiling" something doesn't stop me from appreciating the context of what would be the spoiler because unlike you im not a sub 90 iq moron who can't appreciate something unless its in some specific fucking order or can't into displayed or intended context of the series as opposed to your own personal knowledge of the series. You should learn to think for yourself and do some god damn reaearch. Zero is fundamentally different from the rest of the franchise in that Zero focuses on the action, EDGE, and ceaseless SUFFERING, while /Stay Night focuses on the character's emotions and ideals. /Stay Night allows you to actually feel things for the characters while Zero just lets you watch Gen Urobutcher break them apart and turn them into fetish-fuel. His characters are nothing more than lightening rods for suffering and it doesn't serve to make them likable. The only Zero original characters that are likable in Zero are the Rider Team. All the rest are just miserable for 20+ episodes.
You have ruined the franchise for yourself. Stay away from it from here on out.
