It's all Canon, you fools. Fate, UBW and HF are all different timelines within the context of the VN itself. So Shirou x Sakura is canon, because that's HF Shirou. Meanwhile UBW Shirou is for Rin and Fate Shirou for Saber, all three heroines win.
I'm simply more envious of Shirou's relationship with Saber rather than his relationship with Sakura because I prefer her, but really this is the most sensible interpretation of heroine canonicity. Wanting to have only one winner and two "losers" flies in the face of the VN having three heroines with their own endings in the first place.
