The issue that I have with the anime is the pacing. Some scenes just don't translate well from the manga and feel too rushed, so it's better to watch the anime later.

To me it's the exact opposite though. There are some scenes that drag out because of dialogue, especially action pact scenes. The most notable example of what I mean is that during the fight with Dio in Part 3 when Dio and Jotaro leap with their stands a lot of anime onlys confused them for flying because of how long they would show them in the air.
Why did Dio have black hair in the first chapter anyway?

I watched the anime before reading the manga myself, it was interesting to see all the details that were cut or changed. Really, it depends on if you prefer watching anime or reading manga.
