1. Original Gundam series from '79 did something similair to what Evangelion did to so-called 'super mecha' genre. Gundam presented mechas being used as military equipment. In Evangelion, the mechas are owned by organisation protecting the Earth from alien species. The pilots in both Gundam '79 and Evangelion get battle-stressed through piloting the mechas.
You don't have to watch original Gundam before, it is mostly war drama while Evangelion character focused more than anything.
2. Watch episodes in their original order and then watch The End of Evangelion movie. The animation of action scenes was absolutely stunning for '90s.
3. The Rebuild of Evangelion movies are remakes (though there are theories that it might be alternate dimension to original). They dumbed everything down from the original TV series.
4. Watch sub. Dub is considered as awful by many, it also excludes some sound effects mechas make.

OP just watch Darling in the FranXX instead. It's a more kino anime and does what Eva attemped to do: be good. Then you can watch eva but prepare to be bored at the lack of animation towards the end.
The Rebuilds also carve up characters' complexity from the original. They also added some big titted glasses chick which doesn't fit in with ther rest of the cast, just there for fanservice. And 3rd Rebuild movie is absolutely attrocious, it throws proggresion from previous two movies out of the window.

1. Not necessarily. The show takes inspiration from many past mech shows but not to the point where they should feel required to watch beforehand.
2. Watch the original 26 episode series and then follow it up with The End of Evangelion film. Everything else is a separate continuity or a recap.
3. Not really. Just be prepared to listen closely to dialog. Important concepts are brought up and what often sounds like science fiction mumbo-jumbo actually end up being critical to the plot. It's a show you really need to pay attention to rather than watching it in the background.
4. I personally love the dub and it is VERY faithful to the original version. The only downside in my opinion is some poor voice acting from some B characters. If you aren't normally an anime viewer, which it doesn't really sound like you are, the dub will be fine and might even help you understand some of the complicated plot if you aren't used to reading subtitles. It's worth noting that the Netflix version will have a brand new dub that may be better or worse.
5. I'm excited personally. It's an incredible story that has changed the lives of many people and I think there is beauty to that. The more people who see it the better. However, that also means more ignorant people who simply didn't "get it" ruining what otherwise would be solid discussion. Either way I'm glad it's going to have a fresh audience.
