So the interviewer, just after reading the series so far, told the author that if they'd met sooner, Berserk would be better written, completed, and Miura would be working on something new by now. How does the interviewer know that? Is he an oracle? A life coach? A Best Korean dictator?

The "interviewer" is being interviewed. He's recalling a time when he was interviewing someone else, in this case Kentaro Miura.
The "interviewer" is Kazuki Torishima, the president of Hakusensha which is the parent company that publishes Young Animal where Berserk is published. Torishima is best known before that for his work at Shueisha. He was Akira Toriyama's editor, the creator of Dr. Slump, Dragon Ball, who is notorious for being lazy and for procrastinating. He also helped to create Dragon Quest along with him. He then became Editor in Chief of Shonen Jump and V Jump before leaving.

I think that most of the reason that berserk gets so much hiatus is because the magazine wants to keep it alive until they get a new huge hit that can replace it. Berserk ending for Young Animal would be like One Piece ending for Jump.

Well, Jump is way bigger than Young Animal, there's no way people can forget it, but the same can't be said from a smaller magazine. Just by being alive people won't forget about it and will come to check when the manga will come back and check if any of the other manga are interesting. Keeping the "brand" alive helps with sales and they can still milk it in other formats, like games, merchandising, movies and... you know, other formats.
Also, if they end it there is a lot of implications besides people losing interest on the magazine, like Miura leaving for another magazine when the contract ends, since he already showed interest in doing a more loli oriented manga and Young Animal have problems with lolis.
How do you guys deal with the wait? I can't imagine having to wait endlessly for a series like Berserk because I feel empty if my weekly chapter of 5toubun is delayed

It should have just ended with Casca getting her mind back. It would have been a shitty ending but at least it would have been a clear cut goal and free up Miura to use his creative energy on something else. It's been bogged down so much with Griffith literally becoming a Christ figure. I honestly think he just doesn't know how to finish the story at this point and it taking an Inoue style "finding yourself" sabbatical.
Hunter x Hunter has kind of the same issue to a much lesser extent.

I think Casca was raped retarded in 1996. 22 years to finally resolve a major plot point and when it's finally resolved it feels like the author doesn't give a shit and only cares about showing Griffith & co kill more nobodies.

I personally don't think so. I think saying otherwise is wishful thinking by those that just want Berserk to end ASAP no matter what, and then rationalize it as satisfying somehow purely as an afterthought. Even if Miura himself were of that mind, I'd just accept that he wanted it over so he could move on.
With the amount of world building he's done heading into Fantasia and after, and the current amount of plot threads, he'd have to be willing to throw his hands up and nuke the damn thing. I'd be disappointed, but I'd understand.

It's difficult to say. But without rushing it, I'd say AT LEAST one more decent sized arc after wrapping up the introduction to Fantasia. To give you an example, Conviction which was relatively brief was 82 chapters. Millennium Falcon (intro to magic/Kushan war) was 131.
But I don't think Casca fixed -> Teleport to Falconia -> Kill Femto would do everything leading up to this any justice. Nor do I place as much weight on Casca's recovery as others do. We've heard from Skull Knight that her simply regaining her senses was just the tip of the iceberg, and her reaction to Guts right afterward has already proved him right. So even that part isn't neatly wrapped up yet. And there's plenty of other balls in the air besides.

I've seen the last film and it does a lot of stuff well, I don't know why it gets ragged on so hard. I know people bitch about CG but I can't speak for the first two and they might have more of it because I didn't think it was that big an issue.
I think it captured the horror and scale of the Eclipse very well in particular but all anyway ever does is meme about the rape scene.
