The main romance for Takashi was obviously with Saeko, but I wouldn't have minded if Shizuka had an interest in him, too. There were hints of it from time to time, although it was hard to tell how seriously to take them because Shizuka was a bit of a gag character.

I think it should have actually had an arc of trying to survive in the Highschool before setting out. Some events seemed to unfold rather fast, like the bus hierarchy turning into an orgy. I think that stuff could have been played out more had they all been trapped in the school for a couple of weeks at least. Also the one guy that just beat his family to death with a bat. I never get why in these types of stories the moment public order is put into chaos, nigh everyone loses their shit and becomes a psychopath. This is played out in all media like the Purge films. However it seems that Japan loves this type of thing, seeing as their lives are more strictly governed by rules, and the idea of those rules being lifted would be utter chaos.
The zombies became background sound too early, and the hero's go full retard the entire time for the sake of drama. "the zombies can't see so if we're quite they won't be able to find us" "someone drops something *screaming* Everybody Run! *insert them making as much sound as humanly possible". I also think that they needed to develop Takagi more. Her only claim to the group is being a genius and having Yakuza parents who saved the group. Her plans usually just are ignored for whatever Takashi pulls out of his ass, and Saeko just going Samurai on zombies. The author went the route of mashing the a button when making the team dynamic rather than actually utilizing characters strengths. The manga even gives them RPG role explanations, but abandons it for Psycho to run in with her sword and mash a till everyone is dead, and Takashi yells something dumb like "get down" or "look out".

No the author stopped the manga because the earthquake and tsunami were bad and he didn't want to remind people of how horrible natural disasters are though zombie hordes. Kishimoto said something similar in when he brought everyone back from the dead at the end of the pain arc, and went on a full talk no jutsu route. I really don't know how much of this shit were the mangaka's call, or how much it was the publishers pushing for more upbeat stories at the time. Either way the author for HOTD caught a japanese cold and died a couple of years ago.

I think it's because overly erotic manga don't have the same sales as say your average shounen. If you look at sales figures you're going to make smut for manga that have a large fanbase; because it translates to more fish from that pond will bite. A series like Highschool DXD on average has around 70,000 manga sales. The big shounen series have millions. One Piece has over 450mil sales. If you can get 1.5% of that you'd have 60k sales. Artists also follow flavor of the month trends. If otaku are all after a character like Rem or Asuka ect then they'll pander to that.

Guy who draws it is still kicking. He did an interview with ANN trying to explain why Japan doesn't continue stories of dead authors. It comes down to that nobody could tell a generic by the numbers story with tits and zombies that would be as generic and by the number as the author.

Shizuka gets depressed at how useless she seems to be compared to the fighters in the group. After a long day when everyone seems wasted and tired, she sees Takashi take a particularly harsh load of verbal complaint from both Rei and Saya, and he seems particularly broken down. She looks around for Saeko, but she's not there, so she moves to reassure Takashi that he's doing a great job as leader. One thing leads to another, and they sleep together. They agree not to tell anyone, but it keeps gnawing at both of them, and at the group, as the journey continues.
On a different note, the group ultimately encounters Rei's parents again, but this time Shinji, the teacher that Rei hates, gets caught up in things as well. He eventually tries to manipulate everyone against each other, and this leads to Rei's parents being killed by the zombies. Rei flies into a rage and kills Shinji herself, stabbing him through the throat with her rifle's bayonet. Rei insists that she's fine, but as they continue to journey on she keeps seeing flashbacks of Shinji's dead body and his running blood, and it gradually drives her insane.
Takashi keeps worrying about Rei as she grows more and more unhinged. Saeko and Shizuka both worry about him, and both worry that his heart may be turning back towards Rei because of his attentions toward her. Saeko and Shizuka have a private conversation one evening while washing clothes in the river, where Saeko first starts to sense that Shizuka might have feelings for Takashi. Saeko contemplates drowning Shizuka in the river, but is horrified by herself and resists her impulse.
Saya and Kohta finally have sex. Everyone else is delighted.
