The average light novel only uses a lot of hiragana and less complicated kanji as a byproduct of typically using less complex vocabulary than a typical novel (since, as a young adult novel, it's intended for a younger audience). There are light novels that use more difficult vocabulary, uncommon kanji, and complicated sentences than the average adult novel, however.

The actual reason they're called light instead of young adult is because the word "adult" in "young adult" would be taken to mean 18+, so they needed a new name for them, and "light novel" was what eventually stuck.

It just happens that Japanese evolved in a way that they did not leave behind older japanese and still use it in formal writing. There is no specific reason that Japanese has difficulty levels other than that is just how it developed because the history of the land and the culture of the people.

It used to be true, but today most ln authors tend to use complicated kanji/words.
It's still not as complicated as regular novels but it has gottent a lot more because of the edgy/chunibyo trend highly influenced by ninarou.

It did leave behind older Japanese. Using kanji has helped absorb some of the shift by providing symbols that retain more stable meaning even as the underlying pronunciation changes, but there have been massive changes in hiragana usage over the years as a result of pronunciation shifts to the point that Japanese from more than a few centuries ago is largely unintelligible to even native speakers that haven't been exposed to it. Most declensions and some points of the grammar have also changed enough that they're mostly unrecognizable compared to the modern forms.
