It's done to concentrate the flavor and give it a more unique after taste

Cheese is literally aged milk. Some specialty cheeses even use specific moulds to enhance the taste, such as Gorgonzola, which is objectively the best cheese to make sauce with. Point being that just because something has been aged doesn't mean it's dangerous to eat.

Then on Nu-Blue we get an actual international chef showdown with many chefs from many different cultures. Get a top tier smug frenchie, an American, a chinese and a spic all with really high power level. Japan wins because NIPPON BANZAI. Joe is waiting after the finals for Souma. There's another match. It's the end.
Souma finally wins after realizing that something something cooking for the woman you love was Erina all along. Then the confession. Tons of wholesomeness and smiles

Flashforward to Souma's family with children. The kid doesn't wants to eat the veggies or some shit so and both him and Erina cook together, prepare something that the kid likes and finish the series with a final "It wasn't much"

Souma and Mehgloomy go on a fishing voyage above the arctic circle. Megumi's actually more hardcore than Souma.

It should have ended after they beat Azami, but the author doesn't want to give up his cash cow. The ratings are tanking though so he just keeps throwing more and more bullshit hoping it will stick and get people excited, but it's having the exact opposite effect.
