as much as the scene wasn't really needed, the demons showing that they've been watching hyakki and willing to communicate that seems they are getting worried about him and want it confirm he's a problem they want gone.

The demons don't attack Daigo's lands as long the contract still up. Hyakki is getting the parts of his body back, breaking the contract Daigo had with several demons already. Now these demons don't protect his lands anymore.

It would make sense considering Hyakki seemed to have a habit of just shoving whatever he could grab into his mouth to eat. Would also be a little call back to the second episode when Dororo mentioned the fish would taste better with some salt.

Hyakki didn't gain anything back that was mentioned, so that demon isn't one of the 12 that got his parts but a Ghoul like the skeleton or Spider-Waifu.
From there we can gather that, as an aquatic creature, he likely would have been held back by the sludge monster in the first episode, or at least unwilling to venture into Daigo's land as per the demon contract. Hyakkimaru killed the thing before, so there's nothing holding it back from reaching his land and likely it has been attacking the other warlords for some time.
Yeah it was big and strong for a normal human, but if it wasn’t for the water Hyakki could likely one shoot it without issues like he did in the end

The only one I don't have an explanation for is Kamaitachi, the predetor mouth motherfucker that gave him back his leg. He didn't seem to do anything but try to eat Hyakkimaru and then die. There was a very large number of normal yokai established before then, and they were all animal/insect based, so it's entirely possible he was either made to keep them in line or directly created them for meat for food.
All the same regardless the 12 demons so far seem to have two things in common. They require a steady supply of sacrifices, and they all seem to have a function that leaves the world worse without them.

If the manga is anything to go by, and that in itself is debatable, Daigo's going to be a lot more pissed off at Hyakki after this arc. That could push him to find something to use against Hyakkimaru since capturing and killing him would be hard given how strong he is.
