I never watched anime, only read the manga and I have a friend who's marginally interested but he won't commit to follow this huge of a series.

They are all original non canon stories

They're mostly original and don't touch the main story.

Movie 1-5, 7 are kinda whatever.
Movie 8/9 are shitty recap movies
Strong World/Film Z/Gold have a bit more Oda involvement but are still pretty whatever

Beginning of Water 7 to middle-end of Impel Down was peak One Piece. Somewhere around there it got really unreadable really fast.

Dressrosa, in retrospect, isn't bad in the slightest. Hell, I'd say it's a Top 5 OP arc. I found myself enjoying it a lot more on a reread than during its initial release. it isn't flawless, sure, but I can't agree with the OLD GOOD NEW BAD mentality.

One true retcon I noticed in One Piece (my favorite manga) is that when Ace first explained his ability, he said he couldn't create fire, only control it.
Later on Oda changed this philosophy as we saw. Crocodile also never was shown 'creating' sand, only manipulating it.

When you look at AKAINU however, in Marineford, I believe he is the first logia to actively generate his element. Enel, arguably, but Nami proved he wasn't creating the lightning, only manipulating it and concentrating it as it already existed in the atmosphere, when she deflected it.
Aokiji didn't violate this rule (he 'formed' ice rather than generated it from nothing).
But again, in Marineford, when Akainu starts lobbing meteor storm, he's creating the magma.

I hope you realize that Chopper's "human: model human," grants him PEAK human capabilities.
He's as smart as Vegapunk. He's strong like a bodybuilder (though not super humanly strong like Luffy, Zoro, and Sanji). The reason no other characters are using rumble balls is that they did not have high enough INT score to invent them even if they wanted to. The reason Vegapunk hasnt invented them is just a time thing, his focus was creating a devil fruit rather than manipulating one. Chopper's was to manipulate, since he probably was trying really hard back then to have a 'normal human' human form instead of the yetti.
He failed to create a 'normal human' form that would let him blend in, but each failure form turned out to be useful for his journey.

Rumble Balls very well may become central to the Kaido situation. Feeding them to Kaido might be a viable strategy to force him into one form or another that the strawhats have an advantage against.
Kaido is called "the 100 beasts" so he may have 100 forms, which trounces Chopper, but he's a yonko.

I still remember seeing that Luffy vs Lucci fight when I was 15 and having my mind blown, hadn't seen a single episode prior to watching that. So many questions I had. Just kept watching the show waiting to finally see it and understand who all these characters were.

Before Marineford it was always a debate between either Skypiea or Enies Lobby as best arc. Then after Marineford it was all about Marineford or Enies Lobby. I always thought that each arc had a different thing they gave the reader.
Skypiea - Just a well crafted story in the world that didn't really have anything to do with the rest of the main story(Other than them getting a lot of gold for a new ship and Usopp getting the dials)
Enies Lobby(and Water 7) - More of a drama/character story, also a lot of battles and HYPE for the kids(like me)
Marineford - Accumulation of the series so far, so much world building had gone into getting here, things that had been teased were finally shown. Kind of a climax for the first half.

But this could also just be a bunch of bullshit.

tl;dr: Long Ring Long Land Arc is best pre-timeskip arc, all hail Foxy

Water 7/Enies Lobby overstayed its welcome. WAY too bogged down in stupid side fights and there is still no good reason the Strawhats made it past the Buster Call alive.

That said, Luffy vs Lucci is still the best major arc boss fight of the series so far.

The only saga that felt like a complete and competently paced story, while also focusing on adventure and character dynamics more than fights and using the mandatory flashback effectively. It can stand alone and still serve as a good read. Every crew member gets something worthwhile, the conflicts are creative, and the setting is interesting. 10/10
