Last time, Shouko went with her parents to see the Paris Opera perform Swan Lake. At dinner afterwards her father pressed her about Kanade being a rival and while Shouko admitted she was she also stated that Kanade is her friend, that she's unable to even truly hate Ema and that it's her goal to both challenge and improve herself along with all of them. Meanwhile Kanade practiced a bit of the Roland Petit choreography of Coppelia and while talking about her upcoming trip asked Shouko what kind of dancer she wanted to be which stunned her as Shouko hadn't thought about it beyond being a professional. And as it turned out, their contemporary teacher is out on maternity leave necessitating a substitute... who, to Kanade's delight, turned out to be Tamaki, the teacher of the Dance For Fun class at the Kurisu studio.
This time, Tamaki teaches us about contemporary to start volume 10.

I'm not a ballet or dance expert whatsoever, but it doesn't really seem to me that it's about "untraining what you've mastered already", but rather "training something else you didn't do before". Unlike, say, martial arts where you'd have to completely change your stances, guard, footing, sense of distance... if you were to train in another martial art (eventhough some of them are similar and would be less problematic).
