While the animation is stellar and the backgrounds are some of the most detailed and beautiful backgrounds I've ever seen, I still don't think that the movies do their job of properly adapting the VN as good as they could.
They're pretty faithful in terms of what actually happens. but I feel like a lot of atmosphere and narrative cohesion was lost in the translation to film. I was watching the movie with some (non-VN Reader) friends and had the constant urge to explain when stuff was happening for seemingly no reason. And while the movies did manage to capture the occult horror aspect of Fate, they still feel very different. They were going hard for that epic greek tragedy vibe. Which fits the story telling style of Urobuchi in Madoka and Fate/Zero but doesn't really fit Nasu's style. At least I know that I preferred the more melancolic and down to earth atmosphere of FSN and Tsukihime. It gives all the supernatural and horror stuff a lot more impact.
At least they got Shirou's struggle to kill/not kill Sakura right. Him lying to himself was especially well done. So I guess I can't be too mad. It's certainly better than most adaptations. But you should still read the VN.

What was really dissapointting for me personally is that they spent so little time on the scenes with Illya on the playground. I remember crying after the de-worming when Shirou pushed Illya away because he was so preoccupied with Sakura being on the verge of death and how he just felt like the worst person alive at that moment. The characters really suffer from having so much less dialogue and monologue to flesh them out.

They added an alice in wonderland style dream sequence for sakura where she goes absolutely mad. It transitioned from her playfully catching and eating with some walking candy (or something like that) to her devouring people in an alley.

Overall enjoyed it a lot, more than I thought I would, but still have some major criticisms for stuff left out that's important for characterisation/build up.
Illya scenes being cut out, yes, it's Sakura's route but the ending of the route (you know they're going True End) was easily one of the most powerful scenes in the VN and I don't see it hitting anywhere near as hard if they neglect building up the Shirou/Illya sibling bond (both die lorelai and big park choice scene were cut to almost insignificance) which also links to the theme of the route of doing things for the people you love rather than for everybody.
Knife scene. Was done well - up to the point Shirou just walked away without showing Sakura was awake and her crying that she's destroying Shirou. Again, one of my favourite scenes in the VN and vital for Sakura's characterisation and showing that she's aware of what she's doing to him and how Shirou is aware too but doesn't care.
Those are the two big ones, but also lack of scenes showing Shirou dealing with his arm to give it some weight as in the VN it feels like a major thing and (continuing into the third film) shows how much of himself he's sacrificing for Sakura, and also a lack of Shirou/Kotomine interaction because everyone knows that's the best relationship in this route.
Yes, they only have so much time, but other scenes could easily have been cut (Sakura talking to Taiga comes to mind as meh filler)

These two statements sum up my opinion.

Is it horrible? No. But I don't think it's anything to write home about either.

I wonder how secondaries found the pacing in the movie.
Pacing was probably the biggest problem in the original VN route, but watching the film it seems to have the opposite problem pacing wise where the second half (after Shirou loses his arm) feels like a lot of stuff happening but properly lacking the weight and time to explain the significance (outside of Shirou and Sakura's relationship, where most of the important scenes were left in).

I can't wait to see Salter being edgy and cute, but I am going to wait for an actual version of it subbed online, and not a damn camrip from a theater
It will be interesting to see the Sakura route, as it is the route that works the best and makes the most sense, but she is also my least favorite girl out of the three, but I also am not Shirou - I don't self insert as him at least
If Shirou is with Sakura, then Saber/Salter is free for the viewer

Kajiura is obviously a great composer but her music with all the violins and choirs contribute greatly to the more epic atmosphere which is why I'm not too thrilled to have her as the composer for the movies (Kenji Kawai would've been fantastic). However she did do one thing that I was just estatic to have noticed.
She used the main motive of this track youtu.be/B037IVWVy8o?t=410 mulitple times in this and the first movie more or less as a main motive for the movie. But during the second movie she started to mix that motive with the melody of Manten youtube.com/watch?v=Vna1ZVCp4_c (the ED of the Kiritsugu backstory episodes in Zero). I fucking love that song and the subtlety with which she sneeked it into the soundtrack of the movie is just great. Makes everything feel more connected and makes the parallel between Kiritsugu killing his father/Natalia for the greater good and Shirou considering to kill sakura for the same reason that much more apparent if you catch the hint.

Kudos to Nasu, Urobuchi and in this case Kajiura

There's a camrip with surprisingly good quality that's been up subbed for over a month.

I really, really like the song "I Beg You" she wrote, the lyrics are perfect and I can't stop listening to different covers.

I'm trying to catch up on the VN in order not to be spoiled by the movie. Can someone tell me about through what day the second movie covers?

The middle drags a bit pacing wise, but the last 2 days of the route (movie 3) are incredible.
It's kind of a shame its a movie series as the VN has a lot that scenes could be cut out pacing wise, but the movies cut out a lot of important stuff for pacing so neither gets the balance right.

I don't remember the Manten melody being used in Lost butterfly. Which scene was it?
She did use BELIEVE after the rain scene.

It's been over a month since I saw it. I don't remember which scene, But I think it was played on a glockenspiel.

I'm watching it again next week. Maybe I'll notice it this time.
Btw, I forgot to mention that I agree with what you said about the music. While I liked a good number of tracks, I think that going all epic is not a perfect match with HF.
At least they didn't go full orchestra and choir like in Zero. I noticed that many of the "epic" tracks in HF also have e. guitar, bass, and other electronic elements.
Still, I think something more similar to Kajiura's Petit Cossette would been a better match for the overall theme of the movies, and save the "epic" stuff for actually epic scenes.

Now that we've got a general Fate thread going, what are some heroes you would like to see as servants? I always thought Perseus and/or Theseus would make cool servants.
