That said, I do think they're gonna meet Itachi again. I got the impression that he was actually cared a little about Dororo. He took the time to make her hide when the samurai showed up, he could've just run off to start fighting. And it felt like his talk with her both then and when they parted was like he was trying to impart some knowledge on her. Like "I know you're smarter than your parents, you just gotta learn." It was just a shitty way of teaching that.

It's interesting to analyze both Jukai's story and now Itachi's, because both of them are not two inherently bad people, but they committed / are committing morally wrong actions.
Jukai used to serve under the samurai and killed an undefined number of men and women until he realized how fucked up the system was, then he tried to atone for his sins by helping less fortunate people.
Itachi was the 'good guy' who eventually sided with the local lord to safeguard his own life during the Warring states era, at the cost of being called 'traitor' or 'coward'.
