1. Emiya let himself lose.
2. Gilgamesh got cocky and paid the price because Shirou's UBW is a direct counter, and even then Archer AND the grail had to finish Gil for him.
His UBW has been developed over the course of the entire fucking story so calling it "plot armour" is incorrect. If anything, Gilgamesh was made specifically to be a roadblock for Shirou.
3. In HF, Shirou won against a Hercules using his own strength against him by projecting Berserker's weapon, and he was still about to get mashed until Illya popped up and made Berserker pause for half a second.
4. In Sparks Liner High, Archer had developed a technique with his swords specifically to counter Saber. He has survived multiple HGWs and scenarios, so he would obviously have a plan against his number one enemy in fuyuki grail wars.

You're mixing up two different concepts. A first-person narrative has nothing to do with being a self insert. A character can be described as self-insert when the character is not defined well in order to allow readers to fill-in the gaps so that they could sympathise and project themselves onto him. Shirou is not a character like that because he does have goals, history and so on. We see him having nightmares, reflecting on his past and being outspoken about his ideals and goals which are by no means generic. His life and circumstances are not enviable or particularly relatable. He's not an average person by any means. How can people self-insert into him?

It's more his Reality Marble doing that. He's drawing out weapons from his RM by a process that can be mistaken as "projection" magic, but isn't, and since he remembers everything about the weapon including it's powers, naturally the original user's strengths are factored into the weapon. He views the weapon as the hero's power and strength and takes it upon himself.

You can view this as plot armor, it wasn't very well explained outside of the Fate Herc fight, Gilgamesh in UBW, and HF's Berserker fight.

Gil was distracted trying to deal with a literal infinite rain of swords with his finite max output GoB while also trying to combat a kid who's using a bunch of random heroes own strength vs. Gil. It's more like he holds onto a weapon and the weapon does the fighting for him.
This is also how Enkidu beat Gilgamesh in Fate's version of the epic of babylon; Gil took this method of fighting from Enkidu to begin with.

Maybe in superficial appeal. In fact I have no doubt that some Saberface has better visual design than the original. But none of them will replicate the feel of the real Saber. Her character design and actual personality complement each other incredibly well to create this "feel" of hers that's a mix of knightly virtue, some kind of borderline religious sanctity and natural virtue that you'd find in a regular good person. She really is like a shining star and nothing will surpass her. Jeanne did not have that feeling in F/A and none of the F/GO gacha girls even stand a chance.

The thing I like most about Okita is that she knows how to flip the switch between being the lovable goofball and the Shinsengumi's first unit captain. Whenever it was time to get serious, you'd see the resolve and no nonsense attitude you'd expect of a first class samurai. It's even more remarkable because despite her body being so frail, she never makes excuses and fights with her all. In fact her biggest regret was not being able to finish the fight when she was alive because her body failed her, and that sense of duty always translate whenever she fights. And with Gudaguda 3 being played uncharacteristically seriously (at least the first act), you got to see more of that side of Okita.

Yes user, I know there is plenty of edge to FSN. It's immediately apparent there will be some edge to the series from the get go. What I'm saying is that the edge is metered out alongside the silly cooking segments, the tender and awkward moments with the characters, all of them sorta living life together in this weird situation they've all found themselves in. In Fate/Zero the characters are essentially lightening rods for suffering and that's really it outside of the backstory already written by Nasu in FSN. This doesn't necessarily make us like the characters more, it actually dissuades us from wanting to like them because something horrible might happen. Suffering can't get very far in making us like a character, it's also watching them relax or enjoy a tasty meal. That's a big reason why the Stay Night characters are WAY more popular than the Zero exclusive ones, they just have more dimensions to their characters.

Honestly, most of your criticisms seem aimed at Kariya, who is undeniably 100% suffering, and I can get why he might seem a bit shallow to some viewers, since the suffering he goes through doesn't really tie in to his personality or motivations.

Meanwhile, I love Kiritsugu, who, while also suffering quite a bit, is interesting in how that suffering shapes his mindset. All of the tragedies in his life lead to his utilitarian mindset. He couldn't kill Sherry, so his entire village got turned into zombies and burned to the ground. That leads to him believing that the few must be sacrificed to save the many, which leads to him killing his father, his mentor, and dozens of other magi, all for the sake of preventing the deaths of the innocent. This goes on until the Grail shows him the end result of his philosophy, and he understands why he can't hold on to it anymore. In Kiritsugu's case, the suffering is a lot more meaningful, because it essentially becomes his character development. It's like a modern-day Shakespearean tragedy, and those are hard to find these days.

Gen's over reliance on suffering works well for Zero in the parts that connect it with FSN, but when they aren't there to connect to FSN those parts feel full of suffering. Personally those latter parts get to feeling a little too depressing. Especially when you can't breath in with the characters. This happens to different extents with each of the characters. Each team get maybe half on episode of relaxing and getting to know each other in Zero, while FSN is almost half fighting, half loving and learning.

Kiritsugu suffering and Saber suffering made sense because their endings end up being resolved in FSN, while Kariya suffering, sakura and Rin suffering, children getting eaten by a "lol so crazy caster", tohsaka's mom getting murdered-molested by a dude, and a bunch of other shit that happens to people just feel bothersome compared to the suffering in Stay Night. Rin or Sakura Only get resolutions if you play each of their own individual routes. You choose one while the others don't really get resolution. I think that's why the fans are so heated about best girls, because each of them has went through so much in their lives. They only get resolution if you choose one over the other.

People pretending Fate/Zero isn't edgy have no fucking concept of what "edgy" means. Edgy is not just a dick measuring contest of how dark a story element is, edgy is defined by gratuitousness. Something becomes edgy when it sticks out in being unnecessarily dark/shocking/disgusting or otherwise exists for the primary purpose of "trying too hard" to get a reaction from the reader, rather than just serving the narrative.

Shirou discovering the basement full of rotting orphans that Kotomine is using as mana batteries is shocking and horrific, but not edgy. The reader has a long built-up perception of "Kotomine is suspicious as hell and probably a bad guy but he's the closest thing to an authority figure so we'll just have to wait and see" which that sudden reveal immediately crystallizes into "holy shit he's a fucking monster and he's been playing us this whole time, he needs to be stopped."
Gilles de Rais torturing a child by using magic to keep them alive and conscious while their intestines are ripped from their gut, nailed to a table and plucked like guitar strings, in a scene which serves absolutely no narrative purpose but to reinforce that the insane and cruel child murderer is an insane and cruel child murderer, is edgy.
Sakura getting raped by dickworms for 10 years is edgy, because it is completely over the top in what was necessary to portray how she's suffered. It goes both too far and not far enough by not actually showing her being defiled while making light of it in other ways.
Kiritsugu just eating a fucking ordinary hamburger while we listen to his internal monologue masturbate over the "taste of slaughter" infused in the meat and the convenient efficiency of fast food is a more subdued yet much more laughable kind of edgy which demonstrates both the character and author are psychotic manchildren who think monologuing about McDonalds is in any way a cool and mature thing to do.

Both Fate/Zero examples were cut from the anime for obvious reasons.

She was, however in Zero there was a clear sense that she firmly believed and hoped that the grail war could be different. A war strictly between heroic servants with no need for underhanded strategy or for humans to get involved. She accepted the grail war for what it is by the end however.

Wrong. Only two chapters are """"good""" of out dozens because they aren't completely bottom of the barrel like the rest of them.

I played the game and I concur with his assessment. The craft essence buffs are boring passives, and the class counters are a basic rock-paper-scissors mechanic that doesn't really matter because in my experience as a F2P I only had a couple of decent enough Servants and even then I had to rely on the Support to get through fights. The actual combat is barebones, where you get 6 cards at random and have to choose which 3 to use in order to create combos based on either characters or card type. These choices matter but not by much since they are very straightforward. NPs are strong but the animations are fairly lacklustre with the exception of Saber, but that's probably just me being a nostalgiafag. And of course none of this fucking matters because if you spend an SQ your entire party gets revived with a full NP bar which lets you wipe the floor with whomever's left.
