I am quite enjoying the first season so far, it's about what you expect from decent TV anime adaptation. And what does S3 do wrong?

The LN obviously makes a lot of things more clear and less out of left field, but I find the anime plenty enjoyable. You can just keep going through the anime and go read the LN afterward. The anime cuts way too much content from the LN. So much exposition, details, character development is cut. It's just a mediocre adaptation with shitty animation that doesn't do the series justice.

The first arc isn't even the standard case for S1, it really shouldn't be used as the default point of comparison. The difference between seasons is noticeable enough even if you just look at the more normally paced arcs.

That's the right answer. If you're enjoying the anime enough, stick with it since it means you'll probably enjoy the source material when you hit it. When the anime starts to feel too janky, switch over. But, you should also invest in reading from the first volume of the novels though when you get the chance.

The pacing just slowly gets worse as it goes on. S2 also had some stupid cuts, people just glossed over it because there wasn't crazy happenings and because it looked better most of the time

They actually covered all the key points, even if they were not done remotely as good as most hoped. But the point is they covered them, unlike previous seasons which skipped crucial scenes. All the stuff about not understanding what's happening in S3 is because the things that were supposed to have been explained in the previous seasons were not.

The actual Directing of the episode was good enough to convey it in a manner that did not feel rushed, that is what I'm talking about from like you said (even with so many cuts in OT18) they still couldn't produce it in a good way and it came off very fucking obvious.

Which is the epilogue and which they heavily slashed and quite important on characterization alone. They also cut all and any explanation of William's arrival, Villian's characterization among other things such as any of the Dragon Slaying metaphors and how it ties into Ascalon. William vs KL was heavily cut down and not at all the same as the LN either, and such explanations are important for context.
