Rider makes the most sense.
That means he gets the Arbalest, I hope? The Lambda Driver would make a lot of sense as a Noble Phantasm. His base stats would be pretty shit, what with him being just some guy, but the Lambda Driver is basically magic, so that should help out a fair bit. Probably a flat E for Strength, Endurance and Agility, but a bit more decent Magical Energy and Phantasm. Maybe as much as a B? And being in the Arbalest would improve his base stats I imagine.
I think I'm still pretty fucked though.

Protection of the Gods: As Hyakkimaru was saved by the gods from being sacrificed as a child, curses have no effect on him and his luck is unmatched.

A very gimmicky servant in battle, but as long as I'm smart and I devise a good strategy I'm sure Hyakkimaru and I can win.

Skills: Presence Concealment D - Can disguise appearance as a child to avoid detection, and disguise voice as anyone to fool foes.
Detective Sense B - Can sense hostile anxiety nearby.
Item Construction C - Has a variety of gadgets at his disposal.
Noble Phantasm: Sleeping Reaper - Causes deaths and crime to gravitate naturally around him, completely at random and out of his control.
Overall not the best pick strength-wise, but he's smart enough that we could probably figure something out.

A result of a God who was both feared and revered as a wolf. Christian heroes are compelled to strike out against her. Boosts her Str and Agi by one rank when her Noble Phantasm is used.
Monstrous Strength (B)
The body of a monstrous wolf is channelled through her at all times. Boosts her Str by two ranks when her Noble Phantasm is used.
Presence Concealment (D)
In her human form, she was to hide her wolf ears and tail at all costs. Allows her to mask her true power while in human form and inspires doubt as to whether she is truly a Servant.

Holo takes on her true form as the Wise Wolf, activating several stat boosts. Once transforming, it is absolutely impossible to exert any control over her except by disabling the Noble Phantasm with a Command Spell. If her pouch of wheat is destroyed, this Noble Phantasm becomes unusable.
Reminder that avenger/ruler/alter ego/foreigner exist.
So if your character does't fit the bill with the original 7, they might be closer to the extra classes instead.
