To answer your question, it's because of that magical brand brainwashing him or something. On normal familiars like animals it makes them like and obey their master. On a human things get a little more complicated. Upshot is though he's stuck as her personal slave and the runes screw with his mind to facilitate that.
Eventually he's a big damn hero and he gets married to Louise and they go back home to Earth or something. The series is retarded and just devolves into harem bullshit, and inspired a staggering amount of fanfiction of varying quality, the vast majority of which asks "what if Louise summoned a different familiar" who usually doesn't put up with her shit.
