The only way to destroy Sauron is to destroy the ring.
Sneaking into Mordor was a foolish plan, but they didn't have any better option. The weakened and divided armies of men had no chance in a direct attack against Mordor. And the other races had all fucked off.
Even if they could wield the ring (which they can't), it wouldn't do much good.
