That's how the movie business has worked since, at least, the 40s. Test screenings, flyers on cars, hypemen, women paid to faint at horror movies. The only thing different now is we can directly measure data and categorize it thanks to computers and with digital releases we have internet demographics to pull from.
And as many movies that try to be formulaic or "appeal" to their consumers become fuck-ups.
Not every successful or well-liked movie is a conspiracy unto itself, because if Hollywood could constantly churn out profit-generating movies based on a few sheets of data they would do it.

There's as much chaos in demographic and targeted marketing as in any other statistical models. A man's bad mood that he stepped in dog shit yesterday can change how much he enjoys a new song or a movie trailer.
Shit, movie producers used to just buy entire newspapers to keep scandals out of the headlines. Nowadays a fucking youtuber livecamming can tweet a picture of Casey Affleck throwing out a life-sized cardboard cutout of Ana de Armas from Ben's apartment after their breakup.
How many critics have slammed a good movie for having a problematic actor; or how many Yea Forums posts have been dedicated to shitting on good stories because of anachronisms?
You can't successfully market to the collective autism of a large part of the population, at best you keep the customers you've always had and make slow gains.
At worst you alienate your main demographic chasing trends into the ground.
