It's not woke. The black guy represents a Western Hunter Gatherer who, according to archeogenetics, were dark skinned and had blue eyes.
He's actually killed by an Eastern Hunter Gatherer who is lighter skinned.
First part is about hunter gatherers from the South and from the East moving to Scandinavia and mixing producing Scandinavian hunter gatherers (SHG). Mixing is not shown, but paternal lines from the brown ones dominate SHG population (subclades of I2).

The very point of Once Upon A Time was that none of the fairytales and legends it included were their traditional versions. A later season made it very explicit that their respective in-universe authors are fallible human beings with their own biases and sometimes even agendas. And it literally namedropped Walt Disney as one of these authors.
Having a black Lancelot with a Latino King Arthur (who's not all that noble by the way), and none of the characters they interact with batting an eye, is itself just a commentary on how the zeitgeist informs how stories are being retold. So, no, the series itself is not at all "woke", or rather it subverts the notion of its own potential "wokeness". Even if it tried to be woke, it's far too meta to make any serious statement in-universe. Which is also why is very quickly became very wacky and messy, and couldn't really be taken too seriously on a story-level.
