The show was always meant to be subtle and rich from subtext, even back when it was a police procedural. But Will and Hannibal is not just fan fiction. It's in the show. Will and Bedelia talk about it towards the end.
I get that, but it truly fits Hannibal's character. He's meant to be Lucifer, who is himself a known bisexual. I always felt that Hannibal and Clarice shacking up was hamfisted. He even had to brainwash her. The show's pairing is much more natural.

I love the show for how hazy and vague it is. I think there's enough grey area for their "being in love" to be some kind of fetishistic bonding over murder and not necessarily a sexual attraction.
