You either get an old photo-tube-camcorder, which will suck unless you got studio lighting or live in California, or you get a semi-modern VHS or VHS-C Camcorder with a digital sensor, which does the same thing your Canon xyz123 does, just less good with more hassle. Just get your footage on digital, copy it via a good VCR, ideally S-VHS or a later analog Beta revision, and capture that over S-Video. All the analog conundrum is now in post, and you dont have to deal with it on set, and you get the same result.
If you´re adamant about getting it on an appropriate sensor, use a DV camcorder like in Blair Witch, and then transfer it.

Yes, the less good + more hassle is part of what adds up to the more authentic feel.
All your techno fiddling adds up to "looks like VHS but not quite", plus it would end up taking more time to basically unrefine it. I'd rather mess around with a difficult camera that doesn't produce "film set" quality film – because the whole point is for it to not look like a film set.

So, if you want to do a bit better, get an old broadcast camera and hook it up directly to a professional VCR (probably analog Beta) - those are built like tanks and you can get them for pennies, because no one shoots 480i anymore. But your whole workflow stays analog, and you can even get editing done on those.

I wouldn't be opposed to doing an amateur film on VHS. Depending on the type of film/scene, the lighting and colors don't have to "work" to work. Again, part of the appeal is in the raw authenticity of it.
The problem with gear-heads is they don't tend to have much artistic vision.
