It's how we as Americans have been trained to tip. We know it's a stupid system. We know the waiters would rather be doing anything else. The majority of us don't take pride in leaving shitty tips and bragging about it on the internet. It's just one of those oddities of social decorum that we follow.

Europeans who don’t “get” tipping just don’t understand what it’s like to fuck with someone by overtipping or undertipping. They’re also being kind of dishonest in their shit-posting since the Germans, and I imagine others, have words like Trinkgeld and have customs like rounding up the bill.
It just makes sense. Think about it:
The waitress isn't doing any more work, but the kitchen staff are. Therefore it makes more sense to distribute additional money to the waitress.
It's a throwback to cowboy/prospector days, as are strip joints/titty bars and what not.

It's to support people who are underpaid or smaller independent businesses. That's it (outside of stuff that's maybe crossing into sugar daddies prospecting territory). You wouldn't pay more at a chain restaurant or something like that.
In the US you HAVE to tip, to the degree there are customs to give a tip for bad service.
