Gobseck is an interesting character from Balzac's novella simply called Gobseck. He's a super rich pawnbroker and of course he loves money. But the interesting part is that, when Gobseck explains why he loves money so much, you realize Balzac doesn't just follow the stereotype about Jews and money. In some way he mixes one sterotype with another: behind the attraction towards money, there's the love for knowledge.
Another jewish stereotype from french lit would be Mangeclous. Some would have said Solal (supreme chad) but I don't think it's actually a jewish stereotype, rather a unique character. Mangeclous is his crazy stinky uncle. I haven't read the novel where's he's the main protagonist so I suggest you see for yourself. It's called Nailcruncher and you can find Orwell's review about it.
