The thing that really makes Mrs. Brisby so good is that she shows great courage while having great fear at the same time.
She isn't fearless by any means, she's no superhero or anything, and it takes her a long time to really show her courage after a few failures like when she froze in the face of the tractor first starting up.
In so many other stories, you see the hero has balls of steel from the get go or they suddenly have become completely fearless, but not Mrs. Brisby; she's always dealing with fear and is only able to get over it by doing what she knows she has to do for her family.
Secret of NIMH is a great fucking movie and Mrs. Brisby is one of the all time best cartoon protags.

Because the movie makes you care about the character and her struggles. It doesnt need to mean the end of the world if she fails because failure means the death of her children which may as well be the end of her world, and we care about her so we care about that. Her story is about courage built upon love which is a deeply human experience that anyone can empathize with even if the protagonist is this feminine little field mouse whose is otherwise distinctly unheroic. Her struggles wouldn't be so impactful if she was powerful or in control, and her meek maternal nature makes it easy to care for her.
