It would be somewhat different. A lot of the conflict towards the end was due to the twin differences and Dipper not really having anyone to relate to.
But I think one of the Dippers would eventually stray and become Mabel-lite, in which they'd try to have a social life, when they see how unhealthily obsessed with the mysteries the other has gotten.
