I'd suggest the big names like Chopin, Liszt, Beethoven, Rachmaninoff, Mozart etc. if you just want to get into piano. Especially the first two specialized in piano in particular. That being said, their stuff is nothing for beginners if you plan to learn and not just listen, try film music. Learning simple stuff like the Toy Story theme or the song from UP is great practise if you want to start.

Mozart managed to master every form... His operas, late symphonies, quartets, sonatas and concertos both violin and piano, quintets, choral works, etc are exceptional. The sheer volume and quality of his work is astounding, especially since this was all done in about a decade or two.

Beethoven's brilliance comes though on something like the great fugue, or sonata 32... Bernstein put it well that most of Beethoven's individual components are fairly uninspiring, but when he places them together, and breaks rules his genius shines through...

Anyway, trying to rank the masters of music is dumb. Is it really worthwhile comparing Shostakovitch to Stravinsky? It's like comparing apples and oranges.

Typical example: the 7th and 8th symphonies premiered quite close together (they're Op 92 & 93). Not long afterwards someone asked him "why is it that people like the Seventh so much more than the Eighth?"
