Vertigo, Psycho, Rear Window, and North by Northwest is a nice introduction.
Vertigo is my favourite, really dialed in to the psychological aspects
Psycho is more of a straightforward horror film, it shows off a lot of his style
Rear Window is a one-room relationship drama, with a murder mystery as plot. Shows his humour and his ability for unconventional storytelling.
North by Northwest is kinda overrated in my book, but a fan favourite. It's more of an adventure-mystery with satirical and comedic elements.
His filmography is more or less all about exploring the psychology of people: The sexual, the romantic, the obsessive, the jealousy, and the urge to destroy.
If you like Vertigo best, move to Marnie. If you like Psycho the best, move to Shadow of a Doubt. If you like Rear Window the best, move to Room. If you like North by Northwest the best, move to The Man Who Knew Too Much.
Start with rear window or vertigo they are pretty comfy. You can also start with his Yea Forums show were he goes through the story before and after it’s played.

Rear Window and Vertigo highlight his unique strengths the best (to my knowledge), so they'd be great places to start. Also, The Alfred Hitchcock Hour is spectacular and uses each minute to the fullest. In contrast, I feel that a lot of the endings of Alfred Hitchcock Presents, his half-hour show, were rushed and lacked strong conclusions.
Vertigo, Rear Window and North By Northwest are all the movies I've seen from him. More mystery than horror though. If you want horror, you go for Psycho and Birds.

Make sure to watch Alfred Hitchcock Presents, too. Especially if you're a fan of short-story shows where almost everything's one and done like Twilight Zone. They're almost all consistently good, despite varying directors and writers, and the Hitch bumpers are always fantastic.
