the real life reason is that it was easier for christopher lee to hold the prop with a curved hilt

Lee fences, if I recall correctly, so when it came time to create his lightsabre, he asked for a curved hilt just like fencers use. That way, he could use his previous knowledge of fencing as part of a choreography.
