Ive played armoured core, demons souls, dark souls 1-3, bloodborne, sekiro and elden ring.
The only one i struggled was sekiro.
The soulsbornes are fun, easy action rpgs. I blind run solo all of them first try because non-npc summons is for scrubs.
You progress through the game never really needing to grind. The mechanics are pretty solid.
Ive died a lot, sure, but ive never felt "that was bullshit".

It is a punishment, but I think From games are much more annoying than they are difficult. They are slow and require you to wait for openings all the time. A lot of ppl just don't wanna put up with that.
I would rather a froms boss than say a jrpg boss.

An example of a Souls-like done right imo is Nioh, with snappy combat that is a joy to get good at. The From soft combat of locking on and dodging until you see an opening is just super outdated. It was fun in the n64 Zelda games, but it needs an update. Nioh is a great example of an updated version of it. From what i've seen of sifu, it also does a slightly better job than from games, but it's still a lot of waiting around doing nothing.

It is very beautiful. All From soft games are very beautiful. It's probably the ONLY thing they've got going for them, but they are objectively very good looking. The creature and world designs are top notch.
It is not beautiful. It is grey and 90% of the screentime is taken up by giant rotting barnacle-covered feet. It is one of the ugliest games ever mad, and that goes for the empty, nihilistic, postmodern story as well. Fromsoft's greatest achievement is reminding people that Dragon's Dogma exists, and thank God for that.

I'll happily agree with you that their games are dog doodoo (Though Elden Ring looks pretty good, I'll probably get it when it's cheaper) and that Dragon's Dogma is one of the best games ever made, that Dragon's Dogma is god-tier compared to From Software being lower C-tier, but visually From Software games look better than Dragon's Dogma.

I think Elden Ring is the first one that was truly a mainstream success. From Soft was popular in its niche, sure, but I think that has to do mostly with them kinda inventing the Souls-like subgenre and not having much competition, or, as was the case with Nioh, their competition being even less mainstream. From was doing great, but they weren't AAA blockbusters, despite their very strong fanbase.
But that's besides the point.
Yeah, a bunch of ppl love From games, but that doesn't mean ppl who don't like From's combat don't exist.
