I don't know what they were trying with this bitch, it just feels like she was only meant to be a personal villain for Omar, and now she's just...there. I guess they tried to make something more bittersweet and deep with her, but it's not really working.

Isn't that the point. She spent majority of her childhood acting as an enemy to her best friend, and now that things are back to normal she's having difficulty adjusting to the way of living. She's trying, just like Omar is, but at her own pace.
The King still has a villain plan, so it's likely he'll try to recruit Maya again to give her purpose once more.
I hope we get to see more of Maya's side of the story, the relationship with her brother, ect

but the way they treat her is so half-baked, I get they're trying to go for an "it's complicated" angle, but it really isn't. She was a bitch, he wasn't, and now without the king, everyone gets along. It just feels like the characters are acting like the situation is more complex than it really is and it comes off as awkward, and not in the way that was intended.

It's more complex than that. Like Maya said in the episode, they were enemies more time than they were friends. It's hard to come back from that, it takes a lot of time to heal. You can't be buddy-buddy again after all of that.
I avoided this show for the longest time because I convinced myself it was just a black Clarence clone with forced gay couples for pandering but honestly this show is really really good. There's a lot of soul and dedication in the worldbuilding and characters and while there are a lot of gay couples in the show none of them really shove it down your throat about it.
