There's a lot to enjoy in it. Solid cast, pretty great acting, nice plot with lots of memorable moments, and iconic costumes.

It's a ripoff of many superior works that came before, that most people either did not see so it's novel and interesting to them now, or that they remember so they can go "hey I know that reference!" This is Quentin Tarantino's entire career in a nutshell besides Reservoir Dogs which was actually somewhat original and well done but ever since then he has just gone increasingly up his own ass while putting out shittier reduxes of brilliant works bastardized for the "ironic" crowd

The dialogue in Kill Bill was horrible though. It was just a bunch of shitty gratuitous monologues that Quentin thinks is clever but is really just boring and trying too hard to seem clever when they don't actually say anything. All the dialogue between characters is extremely flat and simplistic, usually just mall ninja threats.

Kill Bill is unironically his most fun movie(s). They're not Try Hard Deep like Jackie Brown or Pulp Fiction. It's just fun, mindless action and that's what he was going for.
