It was mostly just the novelty of their army though. People were used to mostly fighting foot soldiers, with some cavalry and some knights etc. But the mongols just steamrolled heaps of places with thousands and thousands of horse troops.

Take Hungary for example, after the mongols rode through all the shitty poor eastern European countries, they conquered Hungary, then left. The second time they attacked, the Hungarians had built hundreds of small forts and castles all over the countryside and BTFO the mongols completely. The novelty of their army was adapted to pretty easily.
