Most of the Jedi were gunned down during Order 66. Guns/Lasers are only bad against plot armor.

Any Jedi can be overwhelmed. Except maybe Rey of course. That's how order 66 did it. Put hundreds of guns around them and you'll get some shots in. Obviously you can take them out in a space fight too or with subterfuge. A one on one fight though would require someone trained to ignore fear and adrenaline to focus on just the fight. A master Jedi would be nearly impossible one on one but a knight is seen almost dying to a bounty hunter, a robot, and an assassin.
