I’d prefer another zany adventure from the same setting. Hell, diversity it up if you need to. In the book, Fezzik is Turkish, Inigo is Spanish, Vizzini is Sicilian, and Guilderese are barely white subhuman trash, so cast anyone you want for new characters with original tales of their own.

I think this is actually a consequence of the whole "The next generation will be poorer than their parents" economic shitshow.
In earlier decades it made financial sense to come up with new ideas, because rebellious teens and pretentious adults refused to like the same stuff as their parents simply out if intergenerational contrarianism (not singling them out here: it has been thus since the dawn of time). However, today, with economic power still concentrated in the hands of the older demographic, you make money by continuing to pander to them. And what do these spiritual boomers like? Remakes of movies they saw in their childhood. Lion King. Mulan. Princess Bride.
The degradation of kino is a consequence of the financial degradation of the west in general.

True Grit and The Thing were objectively better than the originals. Remakes/reboots aren't new. Recycling at a faster pace these days is something to sperg about, but it's ultimately about doing it better. Some will always complain but if you have a genuinely better movie leveraging improvements in the art it's fine. That's the problem. Stuff like Ghostbusters made people upset and underperformed largely because it was a remake inferior to the original. Princess Bride was excellent for what they set out to do. You need to beat that original excellence. Not just stick in some political bait and some new CGI.

So it isn't about appeasing them for cash. Especially since any remake is more likely to trigger a segment which has nostalgia for the original.

That's because the originals weren't particularly great to begin with. True Grit is good, but is one of the weakest films starring John Wayne. The Thing from Another World is little more than a glorified B movie. In both cases, there was significant room for improvement. The Princess Bride, on the other hand, is all around excellent and one of the best films to come out of the 80s. There's no way in hell a modern adaptation will be better (let alone nearly as good) as the original. It wouldn't be worth watching, and it's sure as hell not worth making.
