Me and my girlfriend actually did something similar.
Season 1 works pretty well as a contained story, so binging actually works pretty well.Afterwards the story kinda splits up, so if you both want to continue watching at your own paces, that works too. One thing I will recommend is during the first couple of episode, it would help to write down characters' names or keep track of them some other way. There are a few characters whose relationship to others isn't explained that well at first, kinda look like other characters, or straight up appear so infrequently you forget they exist (Rickon).
Much like a real relationship, Game of Thrones starts with a lot of sex and ends in fire and regret.

With a cast as large as GOT, you're bound to mix up one or two characters. Is it really so ridiculous to claim that jotting down a few names would help make 10 hours of television a bit more palatable?

GRRM seems to consider it useful enough. He does exactly that; the book appendixes have family trees to help people keep track of the cast.
Sure, the TV series has less characters than the books, but there are still a lot of them. And some of them get their introductions very offhandedly or their names/roles are mentioned either late or rarely (in the first season this happens for example with Theon, Myrcella, Tommen and Rickon).

I know you're watching with your girlfriend (SUPPOSEDLY) but I honestly recommend the books over the show, and I'm no bookfag. The books are just better, even when book 4/5 become kind of an unfilmable mess, it's still WAY WAY better than what happens to the show.
I enjoyed and still enjoy every season. Everyone hates season 8 because they didn't get their disney fairytale le headcanon ending. It's still better than 95% of shit on tv. Having watched the entire series several times now I found the ending to be very true to the characters. It disappointed a lot of people because they kept projecting their own delusional theories onto the story all the time instead of picking up on the blatant signs of where it was going all along.

S1-S4 are decent; hammy at times, predictable after you get the "flow" of the show (usually after S1), but overall decent. This is mainly because they roughly tried to stick to the book - which, despite his autism and dementia, GRRM at least has some sense of consistency.
S5-S7 are a downward spiral, and S8 is such certified dogshit that even normalfags ended up hating it. S5 being the point they began splitting from the books, with an entire arc that hadn't been in the books at all, and S6-S8 being completely removed from the books.

Certain characters are tough to keep track of: in the early seasons Theon and Robb Stark for example are purposefully portrayed similar so as to emphasize the fraternal bond between them

After season 4 the series noticeably started to feel different (in a bad way) than the first 4 seasons. If you are however going to go past season 4 I highly recommend you just don't watch season 8, it will ruin the rest of the show for you. Doesn't know what he's talking about, the reason no one liked season 8 is because of blatantly obvious continuity issues that cause people to become angry within the first 2 episodes at the show. I wont give any spoilers but if an entire foreign army is wiped out in a battle, then they shouldn't magically appear 3 or 4episodes later the same size as they were. If you've ever heard the term "Plot Armor" then that basically sums up almost every scene in season 8...
But unironically first 4 seasons are pretty kino.
Seriously, watch it, enjoy it and pretend it ended with the S4 finale.
