Just want to point out that Melisandre's magic has an incredible track record of working and it is stated multiple times leading up to the burning that Stannis and his army would perish from the elements, that was what the sacrifice was for, not to win the battle but to stop the blizzards and snows that were going to freeze them all to death. The next episode opens on a shot of icicles melting and the remainder of Stannis' forces that don't desert make it to Winterfell unhindered besides le 20 good men.
Tl:dr burning Shireen worked and saved hundreds of lives that would have been lost. If he hadn't burned her she would have frozen to death
