The eagles should have too. The eagles way of life would have been destroyed and their kind hunted down and eaten or just killed for sport if Sauron had won. The eagles weren't stupid. They would have seen this coming and should have worked against Sauron more willingly.

The ring could change size and mass, so if they dropped it from a high altitude, the ring could adjust for wind condition and avoid falling into mount doom.

Because no matter the direction it would fall it would end up in the lava. Only way to escape the lava from the position the ring was dropped from, was that the ring would become lighter than air and float away, this would change the entire story because it could then just float away in the beginning of the movie and end up with Sauron.

The ring corrupts by proximity, hence why Frodo and Sam separated from the rest of the fellowship.

the ring is a literal deus ex machina that can subtly influence reality in a way that brings it closer to sauron. But it can only operate within reason. If you threw it in the ocean, it could influence a fish to eat it, get the fish caught by a net, get the fisherman to find the ring. But it can't suddenly take flight. Besides, Smeagul fell into Mount Doom with the ring, it wasn't actually thrown

Why aren't Eagles bird enough to grasp the ring via some innocent subject (hobbits or hobbit-kin would be perfect) then kamikaze into Mt Doom? No honor!

The eagles are one of the oldest most powerful creature. It would be stupid to trust them with the ring of power as if they stole it there is basically no getting it back as they can fly

The eagles are not from middle earth, they are children of the king of the gods. He sent them from Valinor, the home of the elves, to carry out messages and his will. The valar vowed never to directly interfere with the affairs of middle earth because last time they did that, they sank the entire northern contenent because their war was so fearsome. Also Sauron device was absolutely perfection. He learned the ring craft from Aule the god of crafting and the father of the dwarves. He then exploited these teachings with the taint he learned from Morgoth (Gods greatest and most evil son). With the knowledge of perfect craftsmanship and evil he forged the one ring. The one ring is the pinnacle of saurons work in middle earth, made to mimic his master. Anyone in possession of the ring could never willfully destroy it. This includes gods. The ring is so potent that Saurons will acted like a poison fume around all creatures near the ring. The eagles would have taken it for themselves. They are elder entities and the ring corrupts you in proportion to your power. That’s why Saruman was turned, the simple communication with Sauron through the Palantir and the visions of the ring were more then sufficient to change his heart.
