You can see them a bit in ROTK when the orcs smash through the doors of Minas Tirith. The shot when it's looking behind the Gondor soldiers towards the advancing orcs, you see the Easterlings behind the orcs with their shields before the shots pans to the orcs running rampant in the city.

Here is the scene but it's so brief that they are easy to miss.

I never noticed that. You have the trolls soaking the shots, the orcs are scattered about, and then the Easterlings are in this one huge mass. It's all kind of hard to see because everyone's armor is dark; you wouldn't be able to even tell the humans apart if it wasn't for the helmets.

I mean for me it's cool that the Easterlings were in battle but I would have loved to see them in action. On the scene they appear, it's obvious that the orcs are the first wave of attack and meant to be disposed of easily while the Easterlings are the brunt of the attack with their big shields. It would also have also loved to see them in the Pelennor Fields as some sort of flank attack from the city while the Rohirrim think they have gained an advantage over the Haradrim.
