I'd say he's a top tier chef, but on the low end of that bracket.
Arguably he's at least a better businessman than he is a cook.

He has superb pedigree and did go through the high end chef gauntlet that still existed in the 70s and 80s. His experience alone puts him in the elite.
That said, he is a bit of a food snob. I know a lot of restaurants that put out good food but use microwaves and stufd they made then froze. Knowing how to churn out not so top end items takes process too.

to be fair the cowboy burger (top one) is still bigger than the bottom one, and uses thick slices on top of the bun to thicken the stack even more.
Also the cowboy looks like shit, very unappetizing.

When you make a meal, there is always one ingredient that should be the main ingredient. Other ingredients are just there to complement said ingredient - in this situation, the patty is the most important part of the burger. Therefore, other flavours should complement, rather than overwhelm the burger.

medium-rare and medium cooked burgers are good, but i prefer thin patties. i don't know why people try to pretend eating a burger that's large and mostly meat is in any way pleasant. the ratio and size is all off.

He's a world class chef who became well-known in the restaurant business before he started appearing on tv, as opposed to celebrity chefs like Jaime Oliver or Nigella who are just barely decent cooks chosen mainly for their appearance and communication skills on camera.

I'm not saying he's the best chef in the world, but it's still super hard to get 3 stars on the Michelin guide.
Currently only 5 restaurants in the entire UK are 3-starred.
