Except when they had him dye his hair dark brown to protray middle aged Luke (which looks absolutely ridiculous, since Mark NEVER had this hair colour in his life) and then had a closeup shot of his face when he tells Kylo "The war is just beginning. And [he] won't be The Last Jedi(tm)". You can see his left eyelid droop and the bloodshot sclera of that eye. Viewed in cinema, it looked horrendous.

Before, he had such beautiful eyes before the accident, it's obvious they had to pull the skin on his face down to cover the damage, his eyelids look really weird after the surgery.

His nose, mouth and eyelids are stretched, the way his cheeks look like indicate that he had a massive facelift surgery, or if it's a result of an emergency situation, his face was degloved and reattached more tightly than it was before.

The major difference is the nose, it's alot wider and slightly croocked and upturned after the accident which makes his face look wider. He also probably gained some weight between films and after the accident.

Also a slightly different and shorter haircut in Empire strikes back.

He lost a hand too, that's why he has a robot hand in the last movie.

I actually thought that the face change was perfect. In the first movie he was a good looking farm boy who was naive and whiny so it all worked out. By the final movie he'd found out his dad was the second biggest asshole in the galaxy, had his hand cut off (by said asshole), almost froze to death and been through a lot of shit so the accident made him look grittier and harder. So it all worked out.

Hamil's surgery was focused on returning his face to how it looked before it was mangled resulting in him looking pretty similar before and after.
The bog surgeries are focused on changing the sizes and shapes of things leading to a face that doesn't match the existing skin and bone structure.

I never even knew he got into an accident until sometime in the early 2000's, and I watched the OT religiously all through out the 90's. To me it just looked liked he got older.

His face looked "better" before the accident. He had a boyish look. After the accident he pretty much could not find good work in film anymore outside of Star Wars. He still looked good after but he wasn't conventionally pretty anymore. Now that he's older and has lost weight his face matches him a lot more. He looks more austere, like an old war veteran or like a patrician.
