This isnt me reaching because the dialogue in that episode heavily points at it being the case, but that was just a metaphor to never leave things unfinished or they'll bite you in the ass. (Which is a pretty significant message for the underlying story) I never liked this show because it was "le cool westernized anime that I'm nostalgic for". Its essentially The Great Gatsby of anime if The Great Gatsby wasnt pretentious and actually good.

I think the episodic nature is kind of the point. It builds a rhythm that it pulls out from under you when Ed, Ein and Faye all leave at once. It's not Evangelion, but it's not supposed to be. It's great for its own reasons.
Agree entirely on the metaphor aspect. Even when they've wrapped things up at the end of each episode, there's a feeling of melancholy. It's repeatedly beat into you that each of the main characters is running away from something they need to face.

True. I can't imagine what it would be like watching it today though. The hype and subculture around it was absurd. It's a bit like Lost or Twin Peaks. The "water cooler" discussion was a big part of the experince.
If anyone here has never seen it, let me say that watching it in the broadcast order is vital, and experiencing the endless eight actually makes the movie better. Watch at least the first second and last episodes of it. Overall, the show's very much of its time. The movie holds up very well and makes a watch worthwhile though. Once you go into theories as well, the meaning of the show changes completely (depending on which one you buy into) which makes it an even better experience in a way.
Evangelion deserves credit for being "first" but honestly watching it I realize some of the worst anime troupes really started here. This show is influential in all the wrong ways and changed the industry for the worse.

Gintama's humor relies on referencing other anime, making fun of anime tropes or just general humor you won't get if you're not Japanese or atleast speak it a little bit.
I don't think there's any comedy anime that you'll find funny if you don't watch anime. Although Gintama would come closest.
What exactly is an OVA? I always thought it was just a movie in an anime series but I just found out K-on has an OVA that is exactly like an "extra" episode that isn't an OVA, and then it also has a movie, that is not an OVA. Also DBZ's movies are not referred to as OVA's.

The irony is that Evangelion rails against a lot of the trends it inadvertently started. Take Rei for example. Post-Eva, anime has been littered with obvious rip-offs which just copy the whole "cute emotionless girl" thing while ignoring that the show demonstrated just how creepy that would be and heavily hinted at her being sexually exploited.
Then there's Asuka who's considered a codifying example of the tsundere. The show goes to lengths to show that behaving like this is not healthy and that Asuka is psychologically unwell.
Kaworu is another character that has an army of clones, the serene, mysterious, helpful bishonen highschool boy, while ignoring that this personality makes an extremely dangerous person.
It's not Anno's fault other people copied the surface level of his work while ignoring the substance.

I'm in the same boat OP, I've watched a lot of anime - including "masterpieces" such as FMA, Death Note, Steins Gate, Mob Psycho, Monster etc. - but it's all so dull and childish compared to Evangelion.

I have a chart of worthwile anime movies. I will just leave a couple of notes for the chart.
You said that you don't care about anime series, so I'm warning that Patlabor is tied to an OVA, while Piano no Mori i and the two Lupin III movies are tied to series.
But the Patlabor OVA is only 7 episodes long, so it's like 2,5 hour, but doesn't really matter in terms of plot, it just that you'll know the characters better. Also Patlabor is a really good movie.
Kara no Kyokai is not one movie, but like an 8 movie series.
Yobi the Five Tailed Fox is not actually an anime, because it's Korean.
If you decide to watch the Cat Returns, then watch Whispers of the Heart first. You'll understand.
