The "light" pantheon headed up by Gwyn is clearly inspired by Greek and Norse mythology, and their goals generally align with "control humanity, keep the light burning, keep it going, until the end of time when everything fades and ends and all we loved is lost", versus another perspective held by the more "evil" insidious dark factions, is that everything is within cycles, and light can only last so long before the dark comes, and then again is also replaced by another cycle of light. The player is essentially allowed to choose, whether to try to keep the endless cycles continuing, or to try to end the cycle and bring about a final, complete end like when Jesus comes back for revelations. Both Eastern and Western outlooks are represented and put in tension with each other, with the player given significant agency over which path to choose.

Dark Souls 3 has 3 endings: you can keep the current cycle going, you can break the current cycle (but it's explicitly said that a new one will start eventually) or you can usurp the flame, whatever that means.
