They've got a point, in as much as giving the audience everything they thought they wanted (Rey is Luke's daughter! What a twist!) would not have made for a much better film. But what we got is still bad.
It's basically a strawman argument. TLJ is unsatisfying and yet the argument they're bringing forth is "Well this is also unsatisfying!" which is a mishmash of people's demands and complaints while ignoring the problems with the movie. It's like people claiming TLJ did something different when it subverted that too. Something different would've been Rey and Kylo joining forces, not Kylo leading the First Order.
The only thing I get from this is that plot points set up in TFA were never going to be satisfactorily concluded.
For example: Luke immediately hyping up and going with Rey would not make sense after 30 years of exile, but anything that did make sense after TFA would be awful regardless.
The problem isn't so much that they didn't meet all the fanfic theories, but that every hanging plot point was basically discarded with a shrug. Reys parents? Nobodies. How is Rey so powerful? Just because. What is Snokes backstory? Too bad he's dead. Even if the answers didn't mesh with the theorizing, giving us some answers, even shitty retarded ones would have been better and more interesting than literally nothing, which is what we got.
A lot of the things people say like "Luke should have just been cool", and "there should have been a scene where the OT cast all meet", do come from a place of brainless fanboyism though. You need to be thinking about what makes for a dramatic story, not what gives you the nostalgia tinglies.
All of that is moot because the film is bad anyway, but a lot of people have a wrong handle on why it's bad.

Why on earth would you assume either of those examples are mutually exclusive to a well written story? They’re super open-ended and even stuff like Dune (the fallen protagonist story RJ wishes he wrote) has Paul doing cool things after his major failures. If someone can’t figure out how to balance that shit they have no business writing professionally.

I didn't believe that they actually spent half their TFA Plinkett video taking shots at Lucas and the prequels and prequel fans until I actually watched it. Holy fucking shit what a misfire.
Well, as for the "the OT cast should all meet one last time" complaint, I think that goes directly against what little good story telling the sequels have had. Leaving Luke out of the first part to put focus on the new heroes and keep people guessing was a good idea, and killing Han in the first part to build drama was a good idea. So it follows that those characters don't get to meet. This may go against fanboy desires, but it is not a failure of the film makers in and of itself.
Luke having a crisis and not instantly being the cool guy you expect is also a good idea. Poorly executed in a lot of ways, but the beginnings of something interesting was there.
The "I just want Luke to be the main character and kill shit with his lightsaber" crowd is small brained, and these people do exist, because I've met them.

Luke got left out because the writers were too incompetent to come up with OCs that could hold their own against him. It is one way to write a story but absolutely not the only way, and the ST writers keep hiding behind this bizarre “This was the only way that worked” mentality that just looks like they don’t have an ounce of imagination in their body.
How is it a bad idea? "The hero is missing. Who will rise to the challenge" is a perfectly sensible place to start a new trilogy. In a way, it's similar to how Lord of the Rings starts with Bilbo being put out of commission, and Frodo having to take his place as the main character. The ST just needed a Frodo, a new character that people actually take to.

If there as another Sith lord, where was he hiding, or how was he initiated into the Sith with Vader and Palpatine both dead? If he's not Sith, what is he?
